Instant Pot Elderberry Syrup

Since becoming a mom of two and sending our toddler to preschool I try to do as much as I can to prevent sickness from spreading in our house. That is when we started using Elderberry Syrup. My husband and I usually only take it on an as need basis but I give my son Elderberry Syrup every day.

Elderberry Syrup is known to:
– Reduce Inflammation
– Reduce Cold Duration
– Fight the Flu

At first I was buying Elderberry Syrup. If you want to buy it and don’t want to make your own here is what we used: Organic Elderberry Syrup
But I wasn’t a fan of the other ingredients listed and I found that it was cheaper to make my own. So below you will find an easy and fast way to make your own elderberry syrup.

Make your own Elderberry Syrup:

Ingredients:
– 1 cup of dried elderberries
– 3 cinnamon sticks
– 4 cups of water
– 1/4 tsp of ground cloves
– 1 tbsp fresh ginger/ or ginger cut into 1/4
– 1 cup raw honey

Instructions:
1. Place Elderberries, cinnamon sticks, water, ground cloves, and ginger into the Instant Pot.
2. Put the lid on and turn nob to SEALING, Set Instant Pot to manual for 12 minutes.
3. Once the pot has finished turn to QUICK release, then turn on the sauté function for an additional 10 minutes.
4. Turn off your instant pot and grab a potato masher; Use this to get additional syrup out of your elderberries. Then poor through a strainer, make sure all berries are removed and keep only the syrup, discard the rest of the ingredients.
5. Wait for elderberry syrup to reach room temperature and add 1 cup of raw honey.
6. Store in your refrigerator. I like to store mine in a mason jar.

Recommend Dosage:
Daily Maintenance: Adults; 10mL/day Children; 5mL/day
Intensive Use: Adults; 10mL/4xday Children; 5mL/4xday

Cinnamon Apples: Instant Pot

Another quick and delicious recipe for a healthy snack or desert. It has helped fill our sweet tooth since being on Whole30. The great thing about this recipe is you can use it not only for cinnamon apple dessert but you can also make your own homemade cinnamon apple sauce.


Cinnamon Apples:
Prep Time: 5 Minutes Cook Time: 2 Minutes

Ingredients:
– 5 Apples ( I used Fuji and Granny Smith)
– Cinnamon
– Honey (If you are on Whole30 OMIT honey)
– Water

Directions:
1. Core and Slice your apples. ( I choose to leave the skin on the apples for a better taste)
2. Put all of your apples in the Instant Pot and cover with Cinnamon, Stir.
3. If you ARE NOT on Whole 30 you can add 2 tbsp of honey.
4. Add 1/2 cup of water
5. Set Instant Pot to manual high pressure for 2 minutes
6. Quick Release and Serve
↑ If you choose to make apple sauce, do a natural release for 5 minutes and then mix apples, you can use hand-held mixer or a KitchenAid. Mix until the consistency your happy with for your apple sauce.

Homemade Chicken Jambalaya

I have always loved to cook but I am the kind that once I find something that I really like I will cook it over and over again until everyone is sick of it. Since getting my Instant Pot and now starting Whole30 it has pushed me out of my box and has me testing out new recipes and even creating some of my own. To me, that has been one of the best things about all of it, being able to create new, tasty and healthy meals for my family. So on my meal planning calendar I planned to make Jambalaya for dinner this week but I couldn’t find a recipe that I really loved. I thought one of the points of Jambalaya was a delicious meal with lots of spices and flavor but for the most part you could make it the way you want. So thats exactly what I did, last night we had homemade Chicken Jambalaya and boy was it good!


Chicken Jambalaya                                                                                                                                                                                                    Prep Time: 7 minutes Cook Time: 15 minutes

   INGREDIENTS                                                                                                                                                                              2 lb Boneless Skinless Chicken Breast, diced                                                                                                                        4 Chicken Sausages                                                                                                                                                                        2 tbsp. Coconut Oil                                                                                                                                                                    Salt                                                                                                                                                                                           Pepper                                                                                                                                                                                                1 cup chopped onion                                                                                                                                                                     3 garlic cloves, minced                                                                                                                                                                   2 cans diced tomatoes; 1 can diced tomatoes, 1 can fire roasted tomatoes                                                                            15 oz can tomato sauce                                                                                                                                                                3 cups chicken stock                                                                                                                                                                        2 tsp paprika                                                                                                                                                                                        2 tsp thyme                                                                                                                                                                                     2 tsp oregano                                                                                                                                                                                     2 tsp garlic powder                                                                                                                                                                          2 tsp onion powder                                                                                                                                                     Cauliflower Rice or Spaghetti Squash 
    INSTRUCTIONS                                                                                                                                                                                                                                                                 1. Dice Chicken breast and chicken sausage, chop onion and mince garlic.                                                                  2. Turn InstantPot to sauté and add above ingredients, until lightly cooked.                                                          3. Turn off Sauté.                                                                                                                                                                          4. Add additional ingredient, stir.                                                                                                                                  5.Cook on Manual High pressure for 15 minutes                                                                                                                6. Serve with Cauliflower rice or Speghetti squash

The ease of the Instant Pot

Every time I use my Instant Pot to cook something new, I love it even more than when I first got it. What could you not love about a Pot that does EVERYTHING. You can read why I love it so much here. But I am going to show you 2 things that I cook regularly that the Instant Pot has made that much easier for me.

Titus and I both love sweet potatoes, we could both share one every night. So Instead of spending the time prepping them for the oven or having to cook them for an hour, I can put them in my Instant Pot.

Instructions:

  1. Clean Sweet Potatoes
  2. Place 1 cup of water into your Instant Pot
  3. You can either put sweet potatoes on Instant Pot Trivet or if you have a steam basket you can use that
  4. Set for manual high pressure for 15 minutes
  5. Slow Release for 20 minutes once it’s finished cooking

 

I’ve always loved to make recipes with spaghetti squash. I love the taste and it does make me feel like I am eating spaghetti. Nathan on the other hand hates it. But I’ve always looked for easier ways to cook a spaghetti squash. Most recipes tell you to cut it in half and bake, or poke holes in it and bake/microwave. I don’t know if you have ever tried to do either of these, but it is not easy to cut or poke holes in a whole spaghetti squash. So the Instant Pot has made it even easier for you. Doing this you can literally peel the skin off, cut it in half, and then remove the seeds. I am loving this new way to prepare mine!

Instructions:

  1. Place 1 cup of water into your Instant Pot
  2. Place trivet in pot and place spaghetti squash onto trivet
  3. Set for manual high pressure for 30 minutes
  4. Quick release once its done cooking
  5. Your spaghetti squash should be ready to peel off the skin; cut in half and remove seeds

Homemade Chicken Noodle Soup- Instant Pot

It’s just been one of those weeks in our house. Over the weekend we lost power for a bit because of a 3 inches of snow, Titus has been fighting colds on and off for a while now and then my husband came down with a stomach bug. Yep, one of those weeks and its cold here in Virginia. It may not be cold for some of y’all but anything below 40 is just to cold for me and I usually don’t want to even get out of my pjs on those days, I know I’ve got a long winter ahead of me. But when it’s really cold out I love soup. So I figured why not make homemade chicken noodle soup in my instant pot.

Below is the recipe in printable/PDF form and a video on how quick, easy and delicious the chicken noodle soup ended up being. One of the things I love about making my own food is I can make it however I want. You will see that I don’t have celery in my recipe, I just don’t like it. So again the great thing about homemade you can have it however you want!

Instant Pot: Salsa Verde Chicken Lettuce Wraps

It’s Monday again and that means meals to plan and prepare for the week. Well, here I am back again to show you how much easier life is with an Instant Pot. This recipe is delicious and quick. No prep time other to poor all of the ingredients into the Pot.

This week I decided to make Salsa Verde Chicken Lettuce wraps for dinner. You can eat this shredded chicken in taco form, in lettuce wraps on in a burrito bowl. We are trying to be a little bit more healthy in our house so we are doing Lettuce Wraps this week. Below I’ll include the recipe, Ingredients and a video on how easy it was to prepare!

Delicious White Chicken Chili- Instant Pot

Alright ya’ll! Here it is! I prepared a step by step video to show you just how easy and quick it is to use an instant pot. I spent a total of 8 minutes in my kitchen!! Thats it! White Chicken Chili

Prep Time: 6 mintues

INGREDIENTS

  • 1 ½ lbs boneless skinless chicken breasts trimmed of excess fat
  • olive oil
  • ½ yellow onion diced
  • 2 cloves garlic minced
  • 2 15oz cans Great Northern Beans
  • 1 15oz can whole kernel corn drained
  • 24 oz. chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 4 oz. cream cheese softened
  • ¼ cup milk

TOPPINGS:

  • shredded Mexican cheese
  • sliced avocados
  • sour cream

INSTRUCTIONS

  • Turn Instant Pot to Sauté. Add 1 tbsp. of olive oil and allow time to heat.
  • Add chicken breasts to Instant Pot, lightly cook chicken on both sides.
  • Turn off instant pot
  • Add diced onion, garlic cloves, Northern beans, corn and chicken broth. Stir.
  • Top with Salt, pepper, cumin, and chili powder.
  • Turn Instant Pot onto manual for 20 mins. Turn valve to sealed.
  • After elapsed time do a fast release (open valve)
  • Once pressure is released remove top and shred chicken (either in the pot or into a mixing bowl.)
  • Add Cream cheese and milk. Stir.

Now enjoy your delicious White chicken Chili

I love my Instant Pot

Have you ever used an Instant Pot? Have you ever heard of an Instant Pot? No matter what your answer, you NEED one.

First things first, this is not sponsored.. I just love my instant pot that much!

I got my first Instant Pot, pressure cooker, a little over 3 months ago and it has changed my life. I have always been a crock pot lover or whatever thing I can find to make the least amount of dishes and cooks my food for me. I think the thing that is so appealing about getting take-out is no dishes and no preparation. Well an instant pot is about the closest thing you will ever get to that. Other than my instant pot I may use 2 other dishes for measuring or stirring and THAT’S IT! I don’t use multiple pans, multiple utensils and tons of different measuring tools. Seriously…. You want one already just from all of that don’t you.

Well if that hasn’t convinced you, I can cook almost EVERY meal in my Instant pot in less than 25 minutes from start to finish. AND it tastes like it has been in a crock pot all day long! As a mom who’s spending her day chasing around a toddler, the thought of dinner only taking me a short time to prepare, tasting delicious and always having extras because of the amount it cooks saves me!

Also the instant pot cooks anything and everything. I’ve cooked tacos, chili, cinnamon apples, mac and cheese and peach cobbler to name a few. Do you know one thing that can cook all of these meals, in the same dish, in that time? It took me 10 minutes to make peach cobbler, 5 minutes to cook cinnamon apples and 20 minutes to cook chili. You can also make your own yogurt in this thing!

How could you not want one after all of this?

So look.. I know 80ish dollars is not chump change. But I promise it is worth every penny spent. It will save you time in so many ways and cooks delicious meals. You can’t go wrong with an Instant Pot.
