Homemade Chicken Jambalaya

I have always loved to cook but I am the kind that once I find something that I really like I will cook it over and over again until everyone is sick of it. Since getting my Instant Pot and now starting Whole30 it has pushed me out of my box and has me testing out new recipes and even creating some of my own. To me, that has been one of the best things about all of it, being able to create new, tasty and healthy meals for my family. So on my meal planning calendar I planned to make Jambalaya for dinner this week but I couldn’t find a recipe that I really loved. I thought one of the points of Jambalaya was a delicious meal with lots of spices and flavor but for the most part you could make it the way you want. So thats exactly what I did, last night we had homemade Chicken Jambalaya and boy was it good!


Chicken Jambalaya                                                                                                                                                                                                    Prep Time: 7 minutes Cook Time: 15 minutes

   INGREDIENTS                                                                                                                                                                              2 lb Boneless Skinless Chicken Breast, diced                                                                                                                        4 Chicken Sausages                                                                                                                                                                        2 tbsp. Coconut Oil                                                                                                                                                                    Salt                                                                                                                                                                                           Pepper                                                                                                                                                                                                1 cup chopped onion                                                                                                                                                                     3 garlic cloves, minced                                                                                                                                                                   2 cans diced tomatoes; 1 can diced tomatoes, 1 can fire roasted tomatoes                                                                            15 oz can tomato sauce                                                                                                                                                                3 cups chicken stock                                                                                                                                                                        2 tsp paprika                                                                                                                                                                                        2 tsp thyme                                                                                                                                                                                     2 tsp oregano                                                                                                                                                                                     2 tsp garlic powder                                                                                                                                                                          2 tsp onion powder                                                                                                                                                     Cauliflower Rice or Spaghetti Squash 
    INSTRUCTIONS                                                                                                                                                                                                                                                                 1. Dice Chicken breast and chicken sausage, chop onion and mince garlic.                                                                  2. Turn InstantPot to sauté and add above ingredients, until lightly cooked.                                                          3. Turn off Sauté.                                                                                                                                                                          4. Add additional ingredient, stir.                                                                                                                                  5.Cook on Manual High pressure for 15 minutes                                                                                                                6. Serve with Cauliflower rice or Speghetti squash

I love my Instant Pot

First things first, this is not sponsored.. I just love my instant pot that much!

I got my first Instant Pot, pressure cooker, a little over 3 months ago and it has changed my life. I have always been a crock pot lover or whatever thing I can find to make the least amount of dishes and cooks my food for me. I think the thing that is so appealing about getting take-out is no dishes and no preparation. Well an instant pot is about the closest thing you will ever get to that. Other than my instant pot I may use 2 other dishes for measuring or stirring and THAT’S IT! I don’t use multiple pans, multiple utensils and tons of different measuring tools. Seriously…. You want one already just from all of that don’t you.

Well if that hasn’t convinced you, I can cook almost EVERY meal in my Instant pot in less than 25 minutes from start to finish. AND it tastes like it has been in a crock pot all day long! As a mom who’s spending her day chasing around a toddler, the thought of dinner only taking me a short time to prepare, tasting delicious and always having extras because of the amount it cooks saves me!

Also the instant pot cooks anything and everything. I’ve cooked tacos, chili, cinnamon apples, mac and cheese and peach cobbler to name a few. Do you know one thing that can cook all of these meals, in the same dish, in that time? It took me 10 minutes to make peach cobbler, 5 minutes to cook cinnamon apples and 20 minutes to cook chili. You can also make your own yogurt in this thing!

How could you not want one after all of this?

So look.. I know 80ish dollars is not chump change. But I promise it is worth every penny spent. It will save you time in so many ways and cooks delicious meals. You can’t go wrong with an Instant Pot.
